Aquaculture was originally looked to as the salvation of wild fish stocks. By taking the pressure off of a wild fishery besieged by a fleet of trawlers and long liners seeking to satisfy an exploding global population, the wild fisheries could only benefit. Or so we thought. Salmon farming now has many detractors, but a newer, more environmentally friendly process is about to change their minds.
Efforts to increase pay for restaurant workers are being promoted in two different but complementary initiatives: increasing the minimum wage for tipped and non-tipped (fast-food) workers, and also by eliminating tipping by substituting a service surcharge embedded in menu pricing , and allocating that surcharge among the entire restaurant staff, including the “back of the house”. I like one idea, but I’m concerned about how the other would play out in upstate New York restaurants.

Dozens of local food enthusiasts gathered at Le Express Bistro In Wappingers yesterday for the kickoff of Hudson Valley Restaurant Week.
Montgomery Place Orchards gets my vote for the prettiest farm stand in the Hudson Valley. Situated on Route 9G just north of the village of Rhinebeck, this picturesque market becomes a destination each summer for shoppers searching for local fresh produce and dairy products from area creameries. My absolute favorite time to visit is in autumn, when the shelves are adorned with dozens of traditional and heirloom varieties of freshly picked apples, and piles of colorful gourds and winter squash and pumpkins galore.
